Cavas Hill is the legacy of the entrepreneurial spirit of a British man – Joseph Hill – who, in 1761, settled among the vineyards of Maset, in Moja (between Barcelona y Tarragona) in order to devote himself to growing vines and making wine. His descendants have continued this family job for generations. His grandson, Joan, inherited his father’s company; he built the country house that currently houses the company and the storage room that was separated from the house by a door that still preserves the lintel engraved with the year of the winery’s founding. The year 1887.

At the end of the 19th century, at the same time as the arrival of the industrial revolution, the growth in learning, the so-called Belle Époque in Europe, and Modernism in Catalonia, the optimistic and entrepreneurial spirit of the society at that time also had its effect on the winery.

In 1918, the Hill family commissioned the architect Antoni Pons to carry out a modernist refurbishment of the main façade. Some years later, in 1924, construction was begun on the historic wine cellars, made up of five galleries dug out of the soft rock, called ‘tapassot’, which is workable and tough, meaning that it can be shaped into walls and arcades in a natural fashion, becoming one of the most remarkable wine cellars of Penedès.

In 1926, they began to lay down the first bottles of cava, made according to the méthode champenoise but with varieties native to the area – macabeo, xarel·lo, and parellada.

Cavas Hill produces various conceived to make any moment special. The process of producing our cava begins in the vineyard. The crucial moment is between August and October: the harvest.

Each variety has its own optimum moment of ripening and taking account of the timeline of each vine is the first step in a painstaking process of production that allows us to guarantee the highest quality of the end product.

The first grape to be collected is the chardonnay, then the macabeo, the xarel·lo, and finally the parellada.

Once the coupage has been made, a magical moment arrives: the bottles are filled and the yeasts are added to bring about the second fermentation that produces the characteristic bubbles.

The bottles rest in the historic wine cellar for months; often for years. The prolonged ageing, together with the quality of our liqueurs d’expedition, matured in barrels made from oak from Allier, is the secret behind the character and personality of our cavas.

Cavas Hill has two lines of products: Cuvée 1887, closely related to the Belle Époque, the festive sprit, and the open attitude, and Cuvée Panot, a tribute to the Modernism that was so important to the origins of our winery.

La Sala Panot is the original winery of Cavas Hill.

It was restored at the same time as the 130 anniversary of the modernist renovation of the facade at the hands of the architect Antoni Pons, an emblem of Modernism in the Penedès of the time. In the course of the restoration, the original walls and roof of the winery were maintained and strengthened, but one of Antoni Gaudí’s most popular construction pieces was incorporated, which lends its name to this iconic space. It is the Panot Gaudí, which currently lines the pavements of the Paseo de Gracia in Barcelona.

The word panot comes from the French word ‘panneau’, which, among other things, refers to a slab used in construction. The modern Catalan architects designed panots with vegetable and animal references that line the pavements of many streets in Barcelona, offering an artistic vision of an urban space at the very feet of pedestrians.

In order to be able to appreciate the design of the Gaudí panot, it is necessary to place at least seven hexagon tiles together, which then reveals the marine motifs that the modernist architect personally shaped on the original tiles: a fossil of a sea snail, a starfish, and seaweed.

The positivism, the expansion of knowledge, industry, commerce, and the people of the Belle Époque’s capacity to live in the moment are fundamental to the history of Cavas Hill. The end of the 19th century and the beginning of the 20th century were years were years of the utmost expression and improvement for the winery. It was the moment when technology served the interest of man: the railway reached Penedès, which meant it was possible to transport wines towards the port of Barcelona and undertake initial exports.

It was a time in history when everything was possible. At Cavas Hill, a subterranean wine cellar was dug out and the brand’s first sparkling drinks began to break on to the market.

Since then, the evolution of our cavas has always gone hand in hand with an open, festive, and optimistic spirit, since the very beginning, which is supported anew by each and every glass today.

Cavas Hill has always had a clear international vocation.

The importation of the French production method in order to add the second stage of fermentation in the bottle of the estate’s wines at the beginning of the 20th century was the seed of a global resolve. From the first moment, the brand exported wines around the world, also maintaining a significant market in Catalonia and in the rest of the Spanish state.

Integrated into the Henkell Group, Cavas Hill distributes its products among around 100 countries around the world by means of a score of subsidiaries in the group. Devoted to grow vines since XVII century, Cavas Hill was founded in 1887, and until today, we have maintained unalterable our will of keeping alive the handcraft production and the traditions of our region, El Penedes. The love for our land, the spirit of improvement and the tradition have been and still are the pillars of our winery.

The vineyard, in Penedes region, is the epicenter of life: the wine evolution along the year determines the celebrations and popular traditions. The celebration of “Tres Tombs” at the beginning of the year, confirms the ties of man with the land and the agricultural culture; the Vintage Party between September and October means the end of one of the most expected stages of the vineyard cycle; the celebration of the arrival of the new wine invites to open the first barrels after the fermentation; and the spring tastings recall us the proximity of the hot months of the year, life begins to sprout and the temperature becomes warmer.
